Paccheri with lobster and cherry tomatoes

(for 4–5 people)
– 500g of paccheri OroGiallo
– 1 lobster of 800 g
– 450g of cherry tomatoes
– 1 clove of garlic
– 1\2 chilli pepper
– 100g of dry white wine
– 1 little bunch of parsley


In a large pan having a diameter of 40 cm., pour some extra-virgin olive oil with the crushed clove of garlic and the chilli pepper, when the garlic is lightly brown add the lobster cut in pieces, add ½ glass of white wine and let evaporate, add the cherry tomatoes cut in little pieces, salt just enough and let cook for 3 – 4 minutes, In a separate pot cook the paccheri in abundant salted water. Once they are cooked, drain them and put them into the prepared sauce . Let them flavour and sprinkle with the chopped fresh parsley. Serve immediately.
